How to Make the Perfect Ghormeh Sabzi
Ghormeh Sabzi is the national dish of Iran — a deeply aromatic herb stew that takes patience and love to perfect. Here is the definitive recipe.

There is a Persian saying: 'A pot of Ghormeh Sabzi says more than a thousand words.' This dark, intensely fragrant stew — made with a mountain of fresh herbs, kidney beans, dried limes and tender lamb — is the dish every Iranian mother makes better than anyone else.
At its heart, Ghormeh Sabzi is a study in contrasts: the brightness of fresh fenugreek against the smoky tang of dried Omani limes, the earthy depth of long-cooked herbs against the bright acidity that lifts the whole pot at the end. Getting the balance right takes practice, but once you do, you will understand why Iranians are so fiercely loyal to this dish.
The Secret: Sautéing the Herbs
The single most important step is frying your herbs until they are very dark — almost brown. This concentrates their flavour and gives the stew its signature depth. Do not rush this step; it takes at least 20 minutes over medium heat.
The Dried Limes
Omani dried limes (limu omani or loomi) are essential — they cannot be substituted. Pierce them before adding to the pot so the sour, slightly bitter liquid can escape into the stew. Remove them before serving, as biting into one is unpleasant!
Rice: The Crowning Glory
Ghormeh Sabzi is always served with Persian chelo rice — steamed basmati with a crispy tahdig crust. Making perfect tahdig is an art in itself, but the basic principle is simple: a layer of lavash bread or potato at the bottom of a well-oiled pot creates the crust as the rice steams above.
Ingredients
- 700g lamb shoulder, cut into chunks
- 400g fresh fenugreek leaves (or 4 tbsp dried)
- 200g fresh flat-leaf parsley
- 200g fresh chives
- 100g fresh coriander
- 2 cans (800g) kidney beans, drained
- 4 dried Omani limes (limu omani), pierced
- 1 large onion, finely diced
- 1 tsp turmeric
- ½ tsp ground cinnamon
- Salt & black pepper to taste
- 4 tbsp vegetable oil
- 500ml water or light lamb stock
- Juice of 1 lemon (to finish)
Method
- Finely chop all herbs (fenugreek, parsley, chives, coriander). Heat 2 tbsp oil in a large pan over medium-high heat and sauté the herbs, stirring constantly, for 20–25 minutes until very dark green and fragrant. Set aside.
- In a large, heavy-bottomed pot, heat the remaining 2 tbsp oil. Sauté the onion until golden (10 min). Add turmeric and cinnamon, stir for 1 minute.
- Add the lamb chunks and brown on all sides (8–10 min). Season generously with salt and pepper.
- Add the sautéed herbs to the pot along with the pierced dried limes and kidney beans. Pour in the stock.
- Bring to a boil, then reduce heat to very low. Cover and simmer for 2–2.5 hours, stirring occasionally, until the lamb is completely tender and the stew is very dark.
- Taste and adjust salt. Add lemon juice to brighten if needed. Remove dried limes before serving.
- Serve hot with Persian saffron rice and yogurt.
