Persian Tea
Deep amber tea brewed slowly in a teapot and enjoyed with rock sugar, dates or cardamom.

Ingredients
- 3 tsp Persian black tea
- 2 cups boiling water
- 2 cardamom pods, optional
- Rock sugar, sugar cubes or dates

Warm the teapot with boiling water.

How to know it is ready
Do not rely on time alone: check texture, aroma and colour. The finished flavour should taste integrated, with no raw spice, floury starch or harsh acidity standing apart.
Adjustments & troubleshooting
If it is thin, reduce uncovered over gentle heat; if too thick, add hot water one spoonful at a time. Correct salt, sweetness and acidity at the end, after the flavours have settled.
Make ahead, storage & serving
The drink base can usually be made one day ahead and chilled airtight. Add ice, sparkling water, fresh herbs or ice cream immediately before serving so the texture stays lively.
